Tasting notes: juniper berry infusion, Chinese white pear, vanilla sorbet
The first sensation is botanical and delicate, with the resinous character of the Tabi variety through juniper berry. Chinese white pear brings a clear and subtle fruitiness, while vanilla sorbet brings a silky and sweet quality. The acidity is present and precise, but more subtle than that of the Pink Bourbon grown by Wilfredo & Carolina.
This coffee comes from El Mesón, one of the highest farms in the Monkaaba community. The farm has been divided among several members of the same family!
Wilfredo & Carolina are responsible for one part, Edwin & Javier, Carolina’s brothers, for another, while the rest is cultivated by other members of the family.
Our relationship with El Mesón began with this Tabi. The first year we worked with the farm, Wilfredo & Carolina were responsible for it, and it was their Tabi that we chose. When the land was redistributed within the family, Wilfredo & Carolina took charge of the Pink Bourbon we buy, while the Tabi was in the hands of Edwin & Javier. This year, we are returning to that original Tabi from Carolina’s brothers, alongside Wilfredo & Carolina’s Pink Bourbon.
Last fall, our Za visited El Mesón and met the family. Surrounded by the farm’s beautiful landscapes, they shared a generous meal, cake and, of course, coffee!
As a pour over, it is botanical and silky. As a cold brew, the acidity softens and the vanilla sorbet note becomes rounder and more indulgent.
