De Profundis opens with a glossy texture, where the sweetness of stone fruit meets a delicate, precise acidity. Dried apricot brings the depth, while yellow kiwi and cantaloupe reveal vibrance, and freshness. Ice cider lingering, leaving us an impression that is intriguing.
This coffee is grown by Angélica Orantes Cano at El Mirador, a farm situated at 1,700 metres above sea level in the Nueva Santa Rosa region of Guatemala. Here, the Pache San Ramón variety finds ideal conditions for developing its complex aromatic profile.
The washed anaerobic process highlights the clarity of its aromas while encouraging an enveloping sweetness and a glossy, lingering finish.
As a pour-over, the fruit notes unfold with precision. In espresso, the texture gains intensity, while in a cortado, the sweetness takes on an almost candied quality.
