Glaze honey coferment is a co-fermented Colombian honey coffee produced by Sebastián Ramírez. After carefully selecting the cherries, he conducts a 120-hour anaerobic fermentation before pulping the coffee. His special touch? Adding red wine yeast, dried strawberries, and berry glucose during the fermentation process.
The result is a remarkably fruity coffee with notes of strawberry yogurt, lingonberry, and linden flower, and a silky texture reminiscent of autumn honey.
